Ingredients
- 2 seal fillets (all fat trimmed)
- Salt
- Pepper
- Green onions, chopped
- Fresh coriander, chopped
- Balsamic vinegar
- Olive oil
Method
- Generously season the fillets with salt and pepper, and leave to rest for a few minutes.
- Heat the oil in a pan. Cook the fillets over a fierce heat for a few minutes to sear the outside. Leave to rest for a few minutes.
- Cut the fillets into fine slices. Cover with the green onions and fresh coriander. Sprinkle with a mix of the olive oil and balsamic vinegar. Serve.
